After fifteen years in the restaurant industry, including stints at the Everest Room and Le Peroquet and serving as operations manager for Lettuce Entertain You catering division, Chef /Owner Mario Rios opened Privata Cafe at 909 N Damen Avenue in Chicago.In February, 1995 positive word-of-mouth brought an attentive audience to the eight-table restaurant, where Rios wowed diners with traditional Italian recipes that incorporated Mexican flavors like chilies, tomatillos, jalapenos and a variety of moles. After only a year on Damen Avenue, Privata moved to a larger space on Chicago Avenue were he continues to serve his patrons. Due to large catering volume, in 2005 Privata closed the restaurant and became a full time catering company. Since then Rios' love of food and hospitality has taken him on a journey that has touched the lives of so many friends, clients and their guests.
